Forsythia Syrup

Forsythia blossoms are a pretty little yellow flower that grows on a shrub and is a part of the olive family. Forsythia are one of the harbingers of spring. Also a fun fact is that forsythia blossoms are edible (just be sure you know how to properly identify it before eating it). They can be made into a tea alone or with other edible flowers or herbs, the blossoms can be tossed onto a fruit salad or used to decorate the top of a cake to add a fun pop of color. They can also be made into a beautiful and delicious syrup which is what I am going to share with you today.

Ingredients:

  • 1 Cup of forsythia blossoms
  • 1 Cup of water
  • 1/2 Cup of raw honey (or more if you prefer it to be sweeter)
  • 1 tsp of pure vanilla extract
Directions:

Put the forsythia blossoms in a half pint jar. Bring water to a boil and pour over the flowers. Let the flower tea steep for several hours or overnight, until it has completely cooled down to room temperature.

Strain blossoms, then stir the honey into the infusion and then add the vanilla extract.

Pour into a bottle or jar and store in the refrigerator and it will keep for 3 to 4 weeks. The syrup can be added to your tea instead of honey, you can pour it on pancakes, waffles or crepe's, you can pour onto your ice cream or add it to your yogurt.

Enjoy!
