If you love the flavor of rosemary and you like to use vinegar in your marinades, sauces, and dressings, why not combine the two together. Rosemary vinegar can be made for yourself or as a gift for someone else. Nothing you buy can equal the thoughtfulness of a gift that you have made yourself and rosemary vinegar is both easy and fun to make. This recipe yields one quart.
Ingredients
1 quart white wine vinegar
2 large rosemary sprigs or to taste (you can find rosemary in your produce department at your grocery store or you may have it growing in your yard)
Directions
In a stainless steel or enameled saucepan, bring the vinegar to a simmer. Pour it into a sterilized bottle or jar and add 2 sprigs of the rosemary, or to taste. Seal and store in a cool, dark place for at least 2 weeks.
* Important: Before using or giving as a gift, remove the rosemary sprigs and replace them with fresh ones.
